Jerk Chicken:

Serves: 4

1 (4 to 5 - pound) whole chicken, cut in quarters (skin on)
1 Lime, halved
1/2 teaspoon Salt
1 Tablespoon oil
2 Tablespoons jerk seasoning or 3 tablespoons jerk marinade
1 Tablespoon dark rum or 2 Tablespoons regular rum, optional

Rub the chicken quarters with the lime, rinse, and pat dry, sprinkle with salt.

In a suitable bowl, mix the rest of the ingredients and add the chicken. rub mixture in thoroughly and allow marinate in the refrigerate for at least 4 hours, preferably overnight.

Preheat the oven to 350 degrees Fahrenheit or light the BBQ

Grill or roast the chicken slowly until very tender for about 40 minutes.

 


Chicken with Couscous:

8 Chicken Legs
4 Ounces yogurt
1 Tablespoon Tandoori spices
18 Ounces Couscous
2 Cups Water
2 Ounces Butter
Salt & Pepper

Marinate chicken in yogurt and tandoori spices. Brown in frying pan and finish in a preheated 400 degree Fahrenheit oven for 15 minutes. Boil water and pour over couscous that has been lightly toasted in a saucepan. Pour in enough water to cover the couscous, at it absorbs the water add the butter and season with salt and pepper. place couscous on a plate and top with the roasted chicken including the juices from the pan.

 


Cola Burgers:

1 Egg
1/2 cup of Cola* divided into 2; 1/4 cups
1/2 cup crushed saltines (approx. 15)
6 Tablespoons salad dressing, divided into 3; 2 tablespoons each (French salad dressing, however creamy style salad dressing will work)
2 Tablespoons grated parmesan cheese
1/4 Teaspoon salt
1 Tablespoon Worchestershire sauce
1 & 1/2 pounds lean ground beef
6 Hamburger Buns

In a bowl, combine the egg, 1/4 cup of cola, cracker crumbs, 2 tablespoons salad dressing, parmesan cheese, salt and worchestshire sauce. Add beef and mix well. shape into 6 1/2" to 3/4" inch thick patties (the mixture will be moist). In a bowl, combine the remaining cola and salad dressing: set aside. grill the patties, uncovered over medium heat for 3 minutes on each side. Brush with cola mixture. grill 8-10 minutes longer or until juices run clear, basting and turning occasionally. serve on buns with condiments

Tangy Pork Loin Roast:

1 & 1/2 Teaspoons Garlic Powder
1 & 1/2 Teaspoons Ground Mustard
1 & 1/2 Teaspoons Dried Marjoram
1 Teaspoon Salt
1 Bone-In Pork Loin Roast (5 pounds)
1/2 cup unsweetened Grapefruit juice
2 tablespoons brown sugar
1 tablespoon grated Grapefruit Peel
1/8 Teaspoon Ground Mace

Gravy: Optional if roast is cooked on BBQ using rotisserie
3 Tablespoons all-purpose flour
1/2 Teaspoons salt
Dash of pepper
1 Medium Grapefruit, peeled, sectioned and chopped

Combine garlic powder, mustard, marjoram and salt: rub over roast. Place on a rack in a shallow roasting pan. Bake, uncovered at 325 degrees Fahrenheit for 1 & 1/2 hours/ remove from the oven: drain.

Combine grapefruit juice, brown sugar, grapefruit peel and Mace: pour half over roast. Bake for 30 minutes longer or until a meat thermometer reads 160o F degrees, basting occasionally with remaining juice mixture. Remove roast to a serving platter and keep warm.

Stir drippings in a pan to loosen brown bits: pour into a measuring cup. Skim off fat: reserve 2 tablespoons drippings. Add enough water to remaining drippings to measure 2 cups: Set aside.

Place flour in a saucepan: Stir in reserved drippings until blended. Gradually stir in reserved liquid until smooth. Add salt and pepper. bring to a boil: cook and stir for 2 minutes or until thickened. Reduce heat; and grapefruit. Serve with the roast.

 


Spice - Rubbed Pork Tenderloin:

Serves: 2

2 Tablespoon Olive Oil
1 Teaspoon each ground Cumin
1 Teaspoon each ground Coriander
1 Teaspoon each ground Oregano Leaves
1 Teaspoon each ground Brown Sugar
1/2 Teaspoon each Garlic Powder
1/2 Teaspoon each Salt
1/2 Teaspoon each Pepper
1/4 Teaspoon ground Ginger
1 Pork tenderloin (3/4 lbs)

Lightly oil grill and heat BBQ to medium heat. In a small bowl, stir oil with seasoning. Pat meat dry with paper towels. Rub mixture evenly over pork. Grill with lid closed, turning meat occasionally, until springy when pressed (155F) 20-25 minutes. Remove and let stand 5 minutes, slice. Serve with tzatziki and grilled veggies.

 


Lamb Shanks:

6-8pcs Lamb shanks (1 per person)
3 cups Beef Stock
1 cup Red Wine
6 Bay leaves
12 Small Onions (shallots)
4 Cloves Garlic, peeled
2 Sprigs Rosemary
3 Sprigs Marjoram
1 TBSP Pepper Corns

Place skillet over high heat. Add lamb shanks and cook 2 mins each side or until well browned
Place lamb shanks in a baking dish. Add stock, wine, bay leaves, garlic, onions, rosemary, marjoram and peppercorns. Cover and bake for 2 hours at 350 degrees (or until lamb is very tender).
Serve with mashed potatoes
